Guest guest Posted October 16, 2002 Report Share Posted October 16, 2002 This is really good even if my nine year old son doesn't agree. *lol* Spaghetti with Spinach Cream Sauce 1/2 cup nonfat or part-skim ricotta cheese 2 tsp grated lemon peel 1/8 tsp grated nutmeg 1 cup skim milk, divided 2 tsp margarine 1/2 cup diced onions 1 box (10 oz) frozen chopped spinach, thawed and squeezed dry 1 1/2 Tbs grated Parmesan cheese 12 oz. spaghetti 1. In a food processor, blend the ricoot, lemon peel, nutmeg and 1 Tb of the milk. 2. In a 2 quart saucean over medium heat, melt the margarine. Stir in the onions; cook, stirring frequently, for 4 to 5 minutes, or until tender. Stir in the ricotta mixture, spinach, Parmesan and the remaining milk. Cook, stirring constantly, for 4 to 6 minutes, or until the liquid is reduced by half. 3. Meanwhile, in a large pot of boiling water, cook the spaghetti for 8 to 10 minutes, or until al dente. Drain. I hope my son eventually outgrows his dislike for all green veggies. I used to be able to get him to eat broccoli " trees " when he was little by telling him to pretend he was a wicked giant eating trees in a peaceful village. No, actually my husband does like broccoli, but in general he's a pain in the patootie about veggies: likes mostly only the very starchy ones (peas, corn, limas). Won't eat 'leafy stuff' --- grrrrr. But you know, he's British and his mother (who also had a lot to answer for in other respects) thought a 'balanced meal' for growing children was baked beans accompanied by french fries (chips, to them of course). According to DH, she cooked all veggies the same (ALL!): boiled them in plenty of water for AT LEAST 30 minutes. Yuck. Anyway, he's come a long way since we've been married so maybe eventually I'll get him to eat leafy stuff - at this point, he'll eat any vegetable I put in a stir-fry or in soup: so I do both of those quite a bit.
