Guest guest Posted December 5, 2002 Report Share Posted December 5, 2002 Spicy Almond Rice serves 4 to 6 1-1/2 tablespoons olive oil 4 whole cloves ¼ teaspoon hot red pepper flakes 2 garlic cloves, minced 2 cups water or broth 1 cup brown jasmine rice 2 teaspoons cumin seeds (I used less, about ½ tsp) 1 bay leaf 1 small onion, diced ½ teaspoon salt 1/3 cup almonds, roasted, chopped Heat the olive oil in a heave sauce pan and stir in cumin seed, cloves, and bay leaf. Cook 5-10 seconds over moderate heat until cumin seed darkens slightly in color (brown not black, black is burnt and ruined). Add red pepper flakes, onion, an d garlic. Stir until onion is softened. add rice and stir to coat grains. Add water and salt, bring to a boil, cover and simmer 50 minutes. Remove from heat and let sit, covered 10 minutes. Fluff with fork. Remove bay leaf. Stir in or top with almonds. Optional: Steam in a small amount of water - peas, corn, and fresh diced red bell pepper for a few minutes only. Drain. Pour these on top of the nuts for a colorful presentation. As people are served, make sure they get some nuts and veggies. Oh, and I also grated just a little fresh ginger over it all, final touch.
