Christmas Cookie Swap

Hi all.

This is an easy easy cookie to make. Simple as pie...well actually simpler

than pie. It was a tradition for my Grandma and I to make them every X-mas.

I would make the peanut-butter cracker sandwiches and she would dunk them

in the almond bark to coat them (so I wouldn't burn myself). We call them

Hi-Ho's, because that is the name of the crackers that she buys (Ritz

knock-offs)....shhhh, I'm using Ritz this season. Anyway, I am sending a

batch to Grandma this season. They are done and sitting in the

refrigerator. For some reason though, one cookie disappears everyday that

they sit in there. I prefer them cold, as I do chips, nuts, crackers and

snacks. Ok here is the complicated recipe.

 

1 box Ritz crackers

1 jar of Creamy peanut-butter

Almond Bark

 

Spread peanut-butter in between 2 Ritz crackers to create several,

individual sandwiches.

Melt almond bark in a double boiler.

Coat the sandwiches with the almond bark.

Place on wax paper to dry and harden.

 

I just made a batch that yielded around 30 cookies. That was about 2 rolls

of crackers, half a medium sized jar of pb and about 12oz. of the bark. I

place the cookies in the refrigerator to harden. It was also tradition for

me to make a couple of double stackers or " big macs " as it were. Good

stuff.

Yum! Those sound very good, Shawn. That might be a fun project for my

kids

this year. :)

 

As for your disappearing cookie problem, do you think it might be

elves?

~ P_T ~ , here is something else your children can do with those cookies if

you choose to make them. Get some sprinkles, peanut or chocolate chips,

nuts or any other topping. And as the chocolate cools they can make their

own individual cookie creations by dropping the toppings on top. Make sure

the chocolate is cool enough not to burn your kids hands (Like you don't

know that) and cool enough not to melt the toppings.

 

Oh and yes, lol, it is DEFINITELY the elves that are swiping those cookies

~nose growing long~.

Good ideas. I was thinking about getting some xmas-like sprinkles and

toppings and letting them go to town decorating them. The only danger

with

my kids is when they lick their fingers and start bouncing off the

walls in a

sugar-buzz fit! *lol* Then its time to turn up the stereo and play

punk rock

holiday music....

 

About those elves, I seem to have an infestation myself. Yesterday I

bought

two bags of Hershey kiss chocolates and I'll be darned if they aren't

disappearing on me! ;)

LOL, yep they love those Hershey kisses! No matter where I hide the

" sweets " , those dern elves find them. I guess we will just have to live

with this problem....oh and live with it guilt-free that is.
