Veggie Pot Pie (vegetarian)

I tried an experiment and this was so yummy I PIGGED out on it! :)

 

I've never been a big fan of Bisquick.... but I recently tried it

again and noticed that it seems to have improved a lot since I was a

kid. Anyhoo, I recently bought a box for some recipe I had, so now

I've got this box left over and I didn't know what to do with it.

So... I discovered a recipe on it for " Easy Chicken Pot Pie " and

wondered if I could convert that to a veggie pot pie? The answer is

a resounding YES! This was QUICK and EASY, and so good I'm going to

make it a lot more times and experiment with this recipe.

 

Here's what I did:

 

1. Turn on oven to 400 degrees (preheat).

 

2. Thaw approximately 2-2/3 cups frozen veggies.

I used a Normandy Blend with zucchini, carrots, broccoli and

cauliflower. I didn't measure. I just poured them into a

collander, ran some hot water over them, then filled up a glass pie

pan with them (how sloppy/easy is this?!), leaving head room for the

crust. I added:

1 stalk celery (sliced)

2-3 heaping t. minced garlic

 

3. Add one can of low-fat mushroom soup, condensed (don't add water

or milk) to the veggies in the pie plate and stir to coat the

veggies.

 

4. In a pourable bowl mix together until blended:

1 cup Bisquick (original)

1/2 cup milk (I used vanilla soy milk)

1 egg

 

5. Pour the Bisquick mix over the veggies.

 

6. Bake for 30 minutes or until golden brown.

 

The crust was a light, bready crust, maybe 1/2 " thick -- probably a

lot fewer calories than a store-bought pies -- and as it was only a

top crust I didn't have the feeling of too much crust as I have

often felt with store bought. The whole thing was very inexpensive,

too. Cleanup consisted of rinsing out the pourable bowl, and an

easy clean up of a glass pie plate.

 

The pie was pretty enough to serve to guests along with a good green

salad. I'm going to experiment with this recipe with different

veggies, and I think it would be a great way to use leftovers as

well as frozen, and fresh veggies that cook quickly (like the celery

did). It might also be fun with different types of creme soups,

such as a cheese soup (but read labels carefully to avoid chicken,

beef). I'd imagine that potato would need to be pre-cooked, though,

or chopped really tiny or sliced thin? Mushrooms would be great in

this, too. You've got to try this one!

This sounds wonderful and so easy, Melinda. Thanks for posting it. I

actually

have a recipe for how to make your own bisquick-type mix, so you

won't have

to buy that expensive brand anymore if you don't want to.

 

I think I am going to try this recipe tonight but will add a bag of

Quorn brand

" chicken " tenders to it and a bit of vegetarian chicken broth to the

C.O.M.

soup; then my kids won't be able to tell it is a veggie meal until

they see me

scooping up a plateful. ;)

I know what Quorn is, but haven't seen any to buy yet -

hopefully, when we get up to Nearest Small City (which has a

Wegman's - wonderful supermarket) I'll see it.

 

But anyway: is quorn good? What does it taste like?

Oh, I'm glad you liked it, P.T. I love those easy ones where I

don't have to go to the store for the ingredients... those last

minute " Now what do I eat? " recipes. lol!

Oh kewl! That's probably healthier, too. If you find it I hope

you'll send it to the list (if you didn't already -- just getting

caught up). You mean you make it ahead of time? How do you store

it?

So.... did you make it? How was it? Mine was SOOOOO good!

I like quorn. Good texture. Although it has been almost 4 years since I have

eaten chicken I think it vaguely tastes like chicken. It is my understanding

that it is not vegan though ( for those of you who are ).

You are right about that, Gary. I just looked at my package and it

does

contain egg whites. I think the MSF chic-patties do as well, and many

other

products like them.

 

I guess when you are a vegan you almost need to read every label with

a

magnifying glass.
