Date Bars - Cookie Swap Recipe

These aren't really cookies. I've never made a successful

cookie in my life, I'm 'cookie-challenged'. :) But these

are good. This was my grandmother's recipe.

Date Bars

Amount Measure Ingredient -- Preparation Method

2 eggs

3/4 cup sugar

1/2 cup flour

1 teaspoon vanilla

1 cup dates -- chopped

1 cup nuts -- chopped

1/2 teaspoon baking powder

 

Preheat oven to 350 F.

 

Separate eggs. Beat yolks, then beat sugar into the yolks.

 

Add flour, baking powder, dates and nuts.

 

Beat egg whites until stiff and fold in to rest.

 

Bake in greased 8 " or 9 " square pan at 350 F for 20-25

minutes. Let cool.

 

 

Cut into bars, then roll in confectioner's sugar.

She always made them at Christmas time, they'd make an

excellent Christmas gift. "

Per Serving (excluding unknown items): 289 Calories; 11g Fat

(33.3% calories from fat); 6g Protein; 45g Carbohydrate; 4g

Dietary Fiber; 47mg Cholesterol; 47mg Sodium. Exchanges:

1/2 Grain(Starch); 1/2 Lean Meat; 1 Fruit; 2 Fat; 1 1/2

Other Carbohydrates.

 

NOTES : I'm guessing as to the amount of baking powder.

I'd left it off from the ingredient list on the old 3x5 card

for this recipe, but included it in the directions. I think

1/2 teaspoon would be enough to raise that little bit of

flour. These don't raise much in any case, they are

flat bars.

I agree. These do sound good and very much like a " Grammy snack " aka

something a grandmother would make.
