recipe for meatless balls

Here's a recipe...Though I know not how it tastes, I

have yet to make them. Anyhoo...Someone please do and

post the verdict!:)

 

1 1/4 cup corn bread stuffing cubes

3/4 cup pecan meal

1/3 cup minced parsley (do not use dried)

1 med/large sweet onion, finely chopped & browned in

skillet in 1 tsp oil

1/2 tsp ground cumin

1 tsp sweet basil

2 Tbsp liquid aminos

1 tsp McKay's chicken style seasoning

1/2 tsp oregano

1/2 cup water

2 Tsp Flax seeds

Heat oven to 350. Put first four ingredients in a

bowl. In blender, blend water, aminos and flax seeds

for 2 min. Scrape down sides and blend again till

thick. Put in glass measuring cuip and microwave for

1 1/2 min. Stire into mixture in bowl. Scoop to form

into balls. Bake for 25 min.

SAUCE:

1 28 oz jar classico sun dried tomato sauce

1 10 oz far smucker all fruit seedless blackberry jam

Melt jam in sauce pan. Add tomato sauce. Mix well

and spoon over meatballs when you serve.

 

Mmmmmm...My mouth is watering!

Thanks, Allison. Hmmm... because I'm an AB blood type I'd have to

modify this one as I can't do corn... but I might be able to

substitute regular bread, I suppose. I wonder if it would be the

same? I don't have aminos or McKay's chicken style seasoning.

lol! Maybe I'll hack at this recipe a bit. Thanks for posting it!

I don't have McKay's either...When a recipe calls for

chicken style seasoning, I use a chicken fajita

seasoning mix that I used to use on chicken back in my

carnivorous days. I prefer that anyway as it has

garlic and cumin...MMMMmmm.

The recipe you posted looks really good! But, I'm

trying to watch my cheese intake over the

holidays...I'll be getting enough calories as it is:)

Did you get these recipes off a website? If so, would

you mind posting it on the links list? I would love

to check it out.

LOL! Yeah, I know it is confusing at times. No problem, I will put it

there.

Thanks for finding such a good source for these veggie meatmoes. I am

going to try some of them, or a combo of the ingredients that sound

good to

me. Actually, these ingredients sound like they would be delicious

stuffed

into a mushroom cap. Mmmmmmm.
