VEGGIE/CEREAL MEATLESS LOAF 6 cups Special K cereal poured from box 1 cup Quaker Oats 1 cup Grapenuts cereal 1 cup bulgur wheat 1 cup chopped walnuts 1 large onion chopped to fill two cups 4 tablespoons olive oil 6 eggs 1/2 cup milk 6 oz. can tomato paste 1/2 cup chopped mushrooms 1 chopped carrot 1 chopped celery stalk 1/2 teaspoon each of basil, sage, marjoram, celery seed and salt. Optionally add pinch of dry mustard, garlic powder, pepper and whatever else you like in your seasoning. Why Special K? I read it in a similar recipe and tried it. I've tried other flake cereals and agree with the cook that came up with Special K that it is the best option. See note about Cheerios as a substitute below. Bring bulgur wheat to a boil in 1-1/2 cups water plus 1/2 cup milk and let simmer for 15 minutes. Add grapenut cereal to soak. Food process or crush Special K cereal. Food process or chop finely walnuts, onion, mushrooms, carrot and celery. Mix cereals, walnuts, onions and mushrooms then add remainder of ingredients. Mix well and put in a spray greased large deep meatloaf pan. Bake for approximately 1-1/4 hour at 375 deg. F. Cover for first half hour with aluminum foil. You can also form the mix into patties for grilling or into meatballs for spaghetti. Another variation is to substitute 4 cups crushed Cheerios for the Special K and Quaker Oats and leave out the tomato paste. You can also add some grated cheese.
