Mock Meatballs and Fantasy Meatballs (2 recipes)

I’ve not tried either of these recipes, because I didn’t much like

meatballs even when I ate meat, but they come from a cookbook I enjoy.

Jean Pare’s “Company’s Coming” series of cookbooks have always been a

good source of recipes for me – pretty simple recipes with ingredients I

have or can easily get. These ones are from “Meatless Cooking” in that

series. Hope they help.

Mock Meatballs

(great-looking casserole full of meatballs smothered in sauce)

 

1 cup rolled oats

1 cup soda cracker crumbs

1 tsp salt

1 tsp pepper

½ tsp ground sage

½ tsp chili powder

 

1 cup creamed cottage cheese

1 ½ cups finely chopped onion

2 large eggs

 

10 oz can condensed cream of mushroom soup

1/3 cup water (or milk)

 

Measure first 6 ingredients into bowl. Stir.

 

Add cottage cheese, onion and eggs. Mix well. Let stand 10 minutes for

crumbs and oatmeal to absorb moisture. Shape into 1 ½ inch balls.

Arrange in ungreased 9x9 inch casserole.

 

Stir soup and water together in bowl. Pour over balls. Cover. Bake in

350F oven for about 45 minutes. Remove cover. Bake for about 30

minutes more until browned slightly.

 

Makes about 27 balls. Serves 6.

 

1 serving contains: 256 caloried; 10.3 g fat; 12 g protein; 3 g fibre

 

 

Fantasy Meatballs

(the fantasy is that its hart to tell it isn’t meat)

 

5 large eggs

1 cup creamed cottage cheese

1 tsp dried sweet basil

¾ tsp salt

1/8 tsp pepper

 

¾ cup chopped onion

1 cup grated mozzarella cheese

3 cups dry bread crumbs

1 cup ground walnuts

1 tsp parsley flakes

1 ¼ tsp poultry seasoning

 

7 ½ oz can tomato sauce

1 cup water

½ tsp granulated sugar

 

Beat eggs in mixing bowl until smooth. Add cottage cheese, basil, salt

and pepper. Beat to mix.

 

Add next 6 ingredients. Stir. Let stand 10 minutes. Shape into 1 ½

inch balls. Arrange in ungreased 9 x 13 inch pan in a single layer.

 

Stir tomato sauce, water and sugar together in small bowl. Pour over

balls. Bake, uncovered, in 350F oven for about 35 minutes.

 

Makes about 3 dozen. Serves 8.

 

1 serving contains: 313 calories; 14.4 g fat; 18 g protein; 2 g fibre
