Christmas pecans

My boyfriend and I are trying to be cheap this Christmas and make most

of our gifts for everyone. We were in our local mall and there was a

booth selling the best smelling candied pecans and almonds, for $4 for

1 cup. Well, Russ and I decided to try to make them ourselves since

pecans are a local crop and really good. We found this recipe on the

web, modified it a bit and it is every bit as good as the ones they are

selling in the mall. Not to mention, they are easy enough for my

non-cooking man to make them... Enjoy! Genie

 

Candied Pecans

 

1 pound pecan halves

1 egg white

2 t. vanilla

1 t. water

 

Beat all but pecans until frothy. Mix pecans into to coat well.

 

In a seperate bowl mix:

 

1 c. sugar

2 t. cinnamon

1 t. nutmeg

 

Mix in with egg covered pecans. Spread on cookie sheet and bake for 1

hour at 300. Enjoy!

I love pecans fixed this way!! They taste so good-- sorta like candy.

They don't taste like they are so simple to make. Although, I think

the recipe with the egg white coating is the best..I thought I would

provide a Vegan version of candy pecans that is still pretty good.

(Vegan) CANDIED PECAN HALVES

 

2 cups water

2 cups sugar

4-6 cups pecan halves

*1 tsp vanilla extract (optional)

 

Boil water; add sugar and stir until dissolved. Add the pecans ( &

vanilla) and continue to cook over medium-high heat, stirring

constantly, until pecans are covered and liquid is evaporated. Place

pecans in one layer on cookie sheet. Bake in preheated 350° F. oven

for about 10 minutes or until the pecans turn whitish in color. Cool

completely before packaging in plastic bags or tins. MAKES 4-6 CUPS

OF PECANS

* In my opinion, vanilla extract is NEVER optional :P
