Super Easy Stuffed Mushrooms

This one is too easy and doesn't last long as people eat them up fast.

 

Needed:

A whole lotta mushrooms, stems removed & wiped clean with a damp paper towel

A tub of cream cheese, plain or a nice vegetable blend cream cheese

Bacos (make sure you get the ones that are made totally from soy)

 

Spread a little cream cheese into the cavity of each mushroom, then dip the

cream cheese side into a little bowl filled with Bacos. Put Bacos-side-up

on a cookie sheet and broil for a short time (2-4 minutes is all you need,

if you broil them any longer than that they get soggy).

 

That chicory and hummus thing also sounds great--and healthy too! I'm going

to have to try that one.

Fast and Easy Finger Foods/Party Nibbles

 

 

I know this is late, but everyone here is so good about responding I thought

it was worth a shot.

 

We're having our annual holiday party this Saturday, and I've decided NOT to

spend a fortune at the caterer's this year. This is also the first year I

haven't been eating meat at the holidays. So, I'd love some recipe

suggestions for finger foods or other appropriate nibbles for a party,

preferably things that don't take massive amounts of preparation.

 

Right now I intend to bake several foccacia breads, grill a bunch of veggies

and drizzle them with balsamic vinegar, bake a bunch of brownies, and do up

a tray with cold cuts (for the carnivoires), cheeses, and crackers. People

will bring things, of course, but I like to ensure that there's plenty for

people to eat.

 

So, does anyone have a favourite recipe or two of this type to share?

The Moms puts a blot of butter before broiling. They are so good. I just

wish she could remember the dern recipe (I didn't forget ~P_T~ , just

waiting for her to find the recipe).

 

Hint: Chop up those stems and add them to your vegy stuffing.

Hi All, I'm relatively new to the list & live in Perth, Western

Australia. I was wodnering if you could tell me what Bacos is as I've

never heard of it before.

 

For party nibbles I suggest dips like hommous, & taziki (you can make a

vegan version using soy cream cheese herbs garlic, cucumber & a dash of

vegan mayo) with rice crackers or chips. If you can get vegan cream cheese

you can make pretty much any flavour dip you like such as adding chopped

sundried tommatoes & olives or even pineapple. Also often we by vege

spring rolls in bulk whcih can just be heated in the oven and aren't too

expensive (usually about $10 for a box of 60).

Lisa: bacos are pretend bacon bits. (I call all the alternatives to meat

" pretend " ... they do exist, but are not the real thing... this is a really good

euphemism for children and older relatives who might not get the vegetarian

thing and for people who would get defensive of their choice to kill animals for

food-- they can see the joy instead of getting upset!)

I have a question about the mushrooms: am I not supposed to be washing these

guys off?! I have been bathing them like little kittens in the sink (it's

actually lots of fun since they float!). Is that bad for them or me? thanks

for the help.

It's little bits of (fake) bacon, made from soy. It comes

in a jar and keeps a long time. You could just skip it, I

think, in most recipes without any serious damage. It

mostly just tastes salty.

at my health food store they have a bulk section, and they had bacos that were

so " life-like " and smelled so much like meat that I couldn't buy them! They

were labeled vegan... couldn't believe it!
