Hi, Pat:

 

I am new to the group, and newly vegetarian. I was

interested in your posting because you mentioned that

you don't eat sweets, you've been vegetarian for 20

years, and you and your husband are interested in

exchanging ideas.

 

I peruse the group poccasionallysionally and skip most

of the recipes and concerns about animals because I am

interested in building a healthy lifestyle for myself;

I'm not so concerned about whether chickens roam free

or cows die painfully.

 

I am preparing to start diet and exercise program,

which I hope will reverse the plaque and

atherosclerosis that I have built up in my coronary

and peripheral arteries over the past 59 years. I'm

looking for a diet and exercise program that will

protect me from diabetes, lung cancer, gout,

hypertension, cardiovascular disease, and the chronic,

degenerative diseases pandemic in the USA.

 

Is anyone out there interested in these things?

Yes, of course. But it's not that simple. No diet is going

to give you 100% protection against all those conditions.

 

I think the evidence is overwhelming, though, that a

moderately low-fat diet heavy on fresh fruits and vegetables

is your best bet. And that grains and carbohydrates should

be WHOLE grains, unrefined (such as brown rice rather than

white rice, wholewheat bread rather than white bread, etc.).

In short, a varied diet of WHOLE natural foods. Just what

the 'health-food freaks' have been saying for the past 50

years or more, actually.

 

I dislike making statements such as this without having URLs

immediately at hand, but in this case, the statement is

based on all that I've read about nutrition over the last

thirty years - which is a considerable amount.

And a response from the 'other' Pat - in London, Ontario.

 

Okay, Ron, it's true that we don't eat sweets - but I mentioned that

only because I understood that we would be doing some recipe exchanging

on this list and wanted to indicate what I could not provide and was not

interested in. Actually, we prefer not to eat sweets because we both

have a sweet tooth but our metabolisms are such that if we eat sugar

(except in fruit) we gain weight - whereas without it we don't crave it

and don't have to worry ;=) (We've been without sweets a lot longer than

we've been vegetarian.)

 

We are keen on a healthy diet too - although neither of us has problems

with heart or cholesterol - and, btw, we also don't like the idea of

eating other critters (but that's an aesthetic thing, an ethical thing

and a personal choice no one else has to buy into).

 

Following on Pat Meadows' post to you on this subject, I would be leary

of any diet which said it could cure all ills - or, frankly, even most

ills. What diet can do, imho, is *cause* ills if it is the wrong diet.

Getting back to less processed food, fresh food, less or no animal fat,

and of course no meat (or for those who aren't there yet, little meat),

in reasonable balance goes a long way to putting us all back on track.

Whole grains are a must in our kitchen, as are plenty of fresh

vegetables and fruit. We use no preprepared packaged foods. This sounds

spartan, but it's not. It's self indulgent ;=)

 

Pat Meadows also kindly included an url to a recent article in

Scientific American. I haven't had time to read it all yet, but I have

saved it and will finish it today. (Thanks from me for that too, Pat!)

Sant & Brown:

 

It's good to finally hear some sense about diet and

exercise. I've been going to Overeaters Anonymous

meetings and listening to television commercials to

try to figure out how to live a healthy lifestyle. I

have felt like everybody, including doctors, has been

lying to me. Thanks for your experience.
