Here is a vegan soup recipe that is quite good. You can spice it up as much as you like. Southwestern Bean Soup 1 large onion, chopped 1 tsp vegetable oil 2 cans (15 oz each) black beans, rinsed and drained 2 cans (14.5 oz each) diced tomatoes with garlic and onion, undrained 4 cups vegetable broth 1 can (16 oz) kidney beans, rinsed and drained 1 can 915 oz) canellini or white kidney beans, rinsed and drained 1 1/2 cups fresh or frozen corn 4 garlic cloves, minced 1 1/2 tsp ground cumin 1 1/2 tsp chili powder 1/8 to 1/4 teaspoon hot pepper sauce In a Dutch oven or soup kettle, saute the onion in oil until tender. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through. Yield: 12 servings (3 quarts) ~ P_T ~ What I say is that, if a fellow really likes potatoes, he must be a pretty decent sort of fellow. ~ A.A. And I suppose one could, if one had more time, slowcook your own beans first rather than use cans. Come to think of it, with a few adaptations it could probably all be done in a slowcooker? One little can cost nearly a dollar and sometimes more, and yet for the same price you can purchase dry beans and prepare 5 time the quantity of delicious product without all the preservatives and salt added; its a no-brainer. I love my crockpot, too. It is pouring again today here in the Pacific Northwest. I am planning to make a pot of soup and also some spaghetti sauce. Glad you liked the recipe, Pat. I realized that the beauty of your recipe - apart from its goodness ! - was in the ease of preparation. We all need those easy to cook things now and then or we'd end up with takeaway, a route I don't like to go. (There again, not being superior, just stating a preference ;=)) It's the salt and preservatives I dislike in most canned produce - and of course in the case of beans it's great that they are so cheap when you buy them in dried form. Sort of like getting food for free ;=) or nearly. Saving money make or may not be a virtue, but it sure does save money. I have a recipe also using beans in soup that you - and others - might like to try. It's not one of my own devising, and I do make alterations to it now and then . . .
