Curried Bean and Mushroom Soup

This recipe is an adaptation of one from _Vegetarian Cooking_ (The

Australian Women's Weekly Home Library), published by Australian

Consolidated Press, Sydney, 1989. Changes are in the vegan-ization (if I

can call it that) of the recipe, and in the substitution of some

ingredients. The method remains much the same - as for most soups of

this kind ;=)

 

CURRIED BEAN AND MUSHROOM SOUP

 

one-third cup dried red kidney beans

one-third cup dried black-eyed beans

one-third cup dried chick peas (garbanzo beans)

one tablespoon of vegetable oil

125g (half pound) baby mushrooms, sliced

one small onion, chopped

one medium to large carrot, finely chopped

one tablespoon curry powder (or more, to taste)

450g (one pound) crushed or chopped tomatoes (canned work fine)

700ml (3 cups) vegetable stock (can use powder or cubes if easier)

two tablespoons chopped fresh parsley

 

Cover beans with boiling water in a large bowl and let stand for around

an hour, drain, and boil in pan of boiling water for half an hour or

until tender. Cook onion in dutch oven or large saucepan in the

vegetable oil on medium heat until soft, then add the curry powder, the

sliced mushrooms and the chopped carrot and stir for about a minute

longer. Add the beans and their cooking liquid, the tomatoes and the

stock and bring to a boil. Reduce heat and simmer for half an hour

longer. Stir in the chopped parsley.

 

Soup can be frozen ;=)

Yum. I am adding this to the files section now. Actually that is one

of my new

year;s resolutions; to add recipes that get posted daily so I don't

get so far

behind in that task. I would like to stop being such a

procrastinator; cute as

that is. *lol*

Oh please don't!!! Use the corrected version just posted instead. I am

so sorry, but the phone was ringing and the dogs were up to mischief and

my mind wandered and then my eyes wandered onto a different recipe - and

well, you can't just cook garbanzo beans like that! Use black

beans/turtle beans or another bean. Anyway, my *corrected* version is

already posted - sorry to put you to such trouble.
