I don't want to step on toes or bend anyone out of shape so I'll keep this simple. I work in the wellness field. The company that I work with has a couple good programs (the best of science and nature combined) for dealing with the above issues. Products used are Kosher Cert. so they are veggie. If anyone would be interested please email me off list. I'd be glad to send info privately for your review. There won't be any harassing or annoying follow up. I figure if you're interested you'll contact me. I think the newly forming slimming group sounds great too! Support is always a good idea. Second, I have several recipes that call for chicken broth or beef broth. This is the only meat product in them. Has anyone tried to use veggie broth in place of chicken or beef broth and was it successful? (did it taste as good)? I don't want to ruin any meals by experimenting. DH frowns big time on waste. The rest of the flavor comes from the juices/fats from the animal. There are long established taste substitutes for this flavor. Try McKay's. They make both beef and chicken style instant broth and seasoning. Also, try Osem, an import from Israel. They make Instant Clear soup & seasoning mix (Consomme). There's others but they're not on my shelf at the moment. Most are veggie. Some are vegan. The taste is very good for all of them. I made " Beanball Soup " (recipe to follow) and the only problem was that it just didn't have the " heartiness " that I am told can be 'synthesized' using some portobellos or breading the 'beanballs' in flour and frying in e.v. olive oil... Guest guest Posted January 6, 2003 Report Share Posted January 6, 2003 I too have a bunch of recipes that call for beef or chicken stock - instead I use vegetable stock. If it needs a strong flavour - like beef - maybe add more mushrooms to your stock when you make it (cook it up and freeze it in two-cup batches) - and a little dark soy sauce helps that along too. I've not ruined anything by this change yet ;=) Good luck. Guest guest Posted January 7, 2003 Report Share Posted January 7, 2003 Yes, I substitute vegetarian " chicken " flavored broth in recipes with great success. Also, I buy it in the bulk bins at my local market, so it costs way less than other brands. They have a veggie-beef version as well which I also use. I have even used it to make gravy for my dog's kibble before. They sure loved it. Works well in all my recipes. You can always use vegetable stock in most recipes without any problem.
