Bean Casserole (vegan)

This is a basic recipe that I use when I feel a need to drop some

weight. It is

very filling and delicious. Have it with a large tossed salad that

includes at

least 5 different fresh vegetables and some fruit for dessert and you

never

leave the table feeling hungry or deprived. You can dress it up using

more

spices and alter the flavor to allow for more variety.

 

Bean Casserole

 

1 cup cooked navy beans

1 cup rice

4 medium potatoes, cubed

1 can stewed tomatoes

2 medium onions, sliced or chopped (your choice)

a pinch of salt

pinch of garlic salt and spices you prefer

 

Mix in a large pot, bring to a boil and then simmer, covered, until

potatoes

and rice are tender.
