My MOPS group (mothers of preschoolers - MOPS.org) does a menu for a two week period with simple recipes included. Unfortunately, most of these have meat in them. It's a great idea, I just wish there were more veggie recipes in it. Most of the Moms get tired of trying to think of something to fix. It comes in handy. The recipes are simple and fairly quick with only a few ingredients. We look forward to the new menus at the meetings. And by the way, if you have small children from birth up to school age, check out the website and find a meeting near you. It's a wondeful group. This is one of the recipes that was given. My kids love it and it makes a nice after school treat or appetizer. 1 box chopped broccoli 1 can cr. of mush soup 1 roll Kraft garlic cheese Heat broccoli and drain water. Mix in soup and cheese (I dice mine up) Heat on low to medium heat until cheese is melted. Add a few drops hot pepper sauce if desired. Serve with your choice of crackers. (my son was 4 then). Maybe look at our files under 'main dishes', then also check out 'soups', 'stews' etc. Loads of easy, delicious recipes in there to pick and choose from to compile a vegetarian menu. Post what you come with, k? Also, thanks for the recipe.
