Guest guest Posted January 24, 2003 Report Share Posted January 24, 2003 Maybe some of you would be interested in these spicey finger foods for the Super Bowl(?) 18 cherry peppers 1 large baking potato 1 cup diced zucchini (about 2 small) 2 garlic cloves, minced 1/2 tsp dried basil 1/2 tsp dried oregano 1.5 tsp olive oil 1/4 cup dry white wine 1/4 cup grated parmesan cheese, divided 1 (3oz) package cream cheese, softened 2 Tbsp sour cream 1/2 tsp salt Cut tops from peppers, and remove seeds and membrane. Set tops aside. Cook peppers in boiling water, covered, for one minute then drain. Plunge into ice water, drain again, and set aside. Peel potato; cut into 1 " pieces. Cook boiling water for 20 minutes or so (until tender), drain and mash. Saute zucchini and next 3 ingredients in hot oil 3 minutes. Add wine, and cook 2 minutes or until liquid evaporates. Remove from heat. Stir together potato, zucchini mixture, 3 Tbsp parmesan, and next three ingredients. Spoon mixture into peppers; place in a lightly greased 13X9 " baking dish. Sprinkle evenly with remaining 1 Tbsp cheese; replace pepper tops. Bake at 400 degrees for 10 minutes or until lightly browned. Mail Plus - Powerful. Affordable. Sign up now. http://mailplus. I am going to skip the superbowl, maybe read a good book and just pop my head up to see the funny ads that always run. I will still need snacks for that though. Thanks.
