Guest guest Posted January 24, 2003 Report Share Posted January 24, 2003 Low-Fat Chocolate Muffins 1 1/2 cups all-purpose flour 3/4 cup sugar 1/4 cup baking cocoa 2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2/3 cup fat-free vanilla yogurt 2/3 cup fat-free milk 1/2 tsp vanilla extract Confectioners' sugar, optional In a bowl, combine the first six ingredients. Stir in yogurt, milk and vanilla until just moistened. Coat muffin cups with onostick cooking spray; fill two- thirds full. Bake at 400 degrees for 15 to 20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from the pan; dust with confectioners' sugar if desired. Yield: 1 dozen Nutritional analysis: One muffin equals 128 calories, trace fat (trace saturated fat), 1mg cholesterol, 258mg sodium, 29g carbohydrate, 1g fiber, 3g protien. I am on the look out for cakes and biscuits which fit my Lady's allowed 100 calorie snack allowance and I think that 128 is close enough, frankly. On the days that she has the Slimfast soup instead of bar for lunch, she can feel a need for something sweet which isn't fruit.
