Ingredients: Lots of eggs, beaten well Some chopped onion Some sliced jalapeno (fresh) Some chopped tomato (seeded prefered) Some diced garlic Some garlic salt Some dried oregano Some cumin seeds Some black pepper 2 corn tortillas, quartered and cut into thin strips 2 golden potatoes Warm flour tortillas ***If you happen to have some cilantro, by all means add to the list. Fry tortillas in olive oil until golden. Drain on towl (or paper napkin). Fry potatoes, onion, jalapeno, garlic and tomato together in olive oil until potatoes are golden and soft. Add all of your spices to taste while they're frying. Using a slotted spoon, scoop out all the veggies and place on towl to drain. Wipe the skillet clean. Spray skillet with cooking spray of choice (or butter/grease it) Now place potato mixture back in skillet, add the tortillas and mix together. Pour eggs on top and scramble everything well. Scoop into the tortillas (you all know how to build a taco, I need not explain). Pour a little garden salsa on top and dig in!
