Guest guest Posted January 25, 2003 Report Share Posted January 25, 2003 Hi All, Currently sitting here eating a very yummy pasta bake that was supposed to be for dinner for the next three days (due to the fact I'm sick of eating packet soup at 10:30pm after I knock off). I don't think it's going to last very long Anyway wanted to share the recipe with you all: Tomato mix: 1 small tin of 4 bean mix 1 regular tin of crushed tomatoes 1 onion chopped as many button mushrooms as you like (ie lots) chopped mixed dried herbs to taste 6 tablespoons of tomato paste (or pre made pasta sauce) handful of dried tvp tablespoon of olive oil *saute onions and mushroom in olive oil until onion is clear *add beans and stir until heated *add tomato paste and stir *add tin of tomatoes and keep stiring *add herbs and tvp and allow to simmer for 15 mins stirring occassionally White sauce: 3 table spoons of vegan margarine 1/3 cup flour 250mls (roughly) of soy milk pinch of salt and white pepper to taste *heat margarine in pan and slowly add the flour continually stirringing in order to get rid of the lumps *slowly add soy milk continually stirring until smooth then add some more soy. the amount of soy you use depends on the heat of the pot and how smooth/thick you like it. I personally like it fairly thick *stir in salt & pepper putting it all together now... In a baking dish pour a little of the tomato mix juice inthe bottom then cover with cooked pasta (I used pasta shells but you could use any other type of pasta). Then pour over the rest of the tomato mix covering the pasta evenly. Then pour over the white sauce making sure the reaches all the edges of the dish. Bake in an moderately hot oven for 15mins. As always the amounts of everything are rough, but adaptable. If you prefer lentils to beans that would work well as would grated carrot or fresh tomato.
