Guest guest Posted February 14, 2003 Report Share Posted February 14, 2003 Spinach Deviled Eggs 12 hard cooked eggs 1/4 cup mayonnaise 2 Tbs vinegar 2 Tbs butter or margarine, softened 1/2 tsp pepper 1/4 tsp salt 1/2 cup frozen chopped spinach, thawed and squeezed dry 4 tsp bacos Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Stir in the mayonnaise, vinegar, butter, pepper and salt. Add spinach and mix well. Stir in bacos bits; spoon into egg whites. Serve immediately or refrigerate until time to serve. Very good used in recipes that call for bacon and also nice to sprinkle on a salad.
