Sweet Texas Vegetarian Chili (non-spicy)

Being a native Texas and having lived there long enough I

know how many there think. Chili needs meat, and especially hot chili

peppers or something else spicy. That is all wrong. This chili is

strictly for gourmets and can raise the roofbeams sky high. Blow

the roof right off. Be warned. This is also a very tasty chili.

 

Ingredients.

1. Two 16 oz. cans of red kidney beans, well drained and rinsed.

2. Two 14 oz. cans of cooked whole tomato without added flavoring nor

any spices.

3. 14-16 oz. of texturized soybean hamburger substitute e.g. Gimme

Lean or similar.

4. One cup of quartered bread-n-butter pickle slices or regular

sweet pickle slices. Each slice is quartered.

5. 1/2 cup of the above pickle juice, or more if desired.

6. One medium chopped yellow onion.

(optional) Sliced mushrooms.

 

Spread out the texturized soy hamburger substitute in a skillet and

heat to brown it and chop it up well.

In a large pot:

Empty the two cans of tomato and cut them up into bite size pieces.

Add the drained and rinsed red kidney beans.

Add the browned texturized soy hamburger substitute.

Add the quartered bread-n-butter pickle slices.

Add the 1/2 cup of pickle juice.

Add the chopped medium yellow onion.

 

Add any needed water to cover the ingredients.

Bring to a boil, cover and simmer, stirring occassionally.

Ready after 10 minutes.

 

A very flavorful " chili " from deep in the heart of Texas. Re-heating

blends the flavors even more.
