[recipe] Hot Fudge Sundae Cake ~ vegan

This dessert is a family favorite. I fix it with coffee instead

of just using the hot water. Using the soy milk instead of

regular dairy milk worked just fine so I typed the recipe in

that manner. Enjoy.

 

Hot Fudge Sundae Cake

 

1 cup all-purpose flour

3/4 cup granulated sugar

2 Tbs cocoa powder

2 tsp baking powder

1/4 tsp salt

1/2 cup soy milk

2 Tbs vegetable oil

1 tsp vanilla extract

1 cup chopped nuts, if desired

1 cup packed brown sugar

1/4 cup cocoa powder

1 3/4 cup very hot water [or coffee]

Vegan vanilla ice cream [or regular if lacto-ovo veg]

 

Heat oven to 350 degrees. Mix flour, granulated sugar,

2 Tbs cocoa, the baking powder and salt in an ungreased

square baking pan (9x9x2). Mix in the soy milk, or other

non-dairy milk of your choice, the oil and vanilla extract

with a fork until smooth. Stir in nuts if desired and spread

mixture evenly around pan. Sprinkle top with brown sugar

and 1/4 cup cocoa powder. Pour very hot water (or coffee)

over top.

 

Bake 40 minutes. Spoon warm cake into dessert dishes and

top with your choice of ice cream (vegan or dairy depending).

Yield: 9 servings.
