Guest guest Posted March 11, 2001 Report Share Posted March 11, 2001 * Exported from MasterCook * Zucchini Italiano Recipe By :Rival Crockpot Cooking Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 zucchini -- unpeeled, cut into 1/4 " slices 1 onion -- thinly sliced & separated into rings 3 tablespoons olive oil 2 cloves garlic -- minced 2 teaspoons salt 2 teaspoons dried basil 2 tablespoons dried parsley flakes 1 dashes pepper 1/2 cup grated parmesan cheese 2 ripe tomatoes -- quartered Combine all ingredients except parmesan cheese and tomatoes in crockpot; stir together thoroughly. Cover and cook on LOW setting for 7 to 10 hours. Before serving, pour into ovenproof casserole. Sprinkle with parmesan cheese and garnish with tomato quarters.
