Guest guest Posted March 17, 2001 Report Share Posted March 17, 2001 Bean Pot Medley (Lowfat-Crockpot) Makes 8 servings 1 can (15-1/2 ounces) black beans, rinsed and drained 1 can (15-1/2 ounces) red beans, rinsed and drained 1 can (15-1/2 ounces) Great Northern beans, rinsed and drained 1 can (15-1/2 ounces) black-eyed peas, rinsed and drained 1 can (8-1/2 ounces) baby lima beans, rinsed and drained 1-1/2 cups ketchup 1 cup chopped onion 1 cup chopped red bell pepper 1 cup chopped green bell pepper 1/2 cup packed brown sugar 1/2 cup water 2 to 3 teaspoons cider vinegar 1 teaspoon dry mustard 2 bay leaves 1/8 teaspoon black pepper Combine all ingredients in slow cooker; stir. Cover and cook on LOW 6 to 7 hours or until onion and bell peppers are tender. Remove and discard bay leaves. Nutrients per Serving: Calories 333 Total Fat 2 g Sat.
