Guest guest Posted April 8, 2001 Report Share Posted April 8, 2001 Vegetable Medley (Lowfat) Makes 8 (1 cup) servings 4 cups diced peeled potatoes 1 1/2 cups frozen whole kernel corn 4 med. tomatoes, seeded and diced 1 cup sliced carrots 1/2 cup chopped onion 3/4 tsp. salt 1/2 tsp. sugar 1/2 tsp. dill weed 1/8 tsp. pepper In a slow cooker combine all ingredients. Cover and cook on LOW for 5-6 hrs. or until vegetables are tender.
