Apple-Mincemeat Bread Pudding

1 4 oz package sugar free vanilla cook and serve pudding

mix

1/2 cup unsweetened apple juice

2 1/2 cups water

1 1/2 teaspoons apple pie spice

1 1/2 cups cored, peeled & chopped cooking apples

1/4 cup raisins

1/4 cup chopped walnuts

12 slices Italian or French bread -- toasted & cut into 1 " cubes

 

Spray a slow cooker container with butter-flavored cooking spray. In a large

bowl, combine dry pudding mix, apple juice, water, and apple pie spice. Stir in

apples, raisins, and walnuts. Add bread. Mix gently to combine. Spoon mixture

into prepared container. Cover and cook on high for 2 hours. Let set for 5

minutes before serving.
