Wow...this ought to keep me busy for awhile. *LOL* I didn't realize there were so many good resources on-line for the newbie vegetarian! It's a shame, the books I've read so far on vegetarianism are aimed at the college students, or the teenagers...but I haven't seen a good inspiring book (yet) aimed at adults on the subject. I collect cookbooks (and my closet is absolutely bulging), but I'm always hunting for that perfect cookbook. *LOL* Meanwhile, I'll have to start experimenting and using the web resources you've given me. Some people just like to make make it so they can call themselves vegetarians also and this is the only way they can with their present diet. It reminds me of people who call themselves vegetarians but they eat chicken and fish. Absurd! Any of the above people aren't vegetarians in my book! How is eating fish any different from consuming other animal flesh like cow, pig or poultry? I thought the basic idea of vegetarianism was to not eat animals. What am I missing? Maybe these people have decided to cut out red meat for dietary reasons, and don't know what else to call themselves? I read once, and I can't remember where, that it was suggested that a mainly veg/fruit/grain diet FLAVORED with bits of meat or stock, is the most healthy. That meat should not be a main dish, but rather a seasoning. That's the route I'm trying to go at this time. Baby steps for this mid-westerner. I'm not trying to start a fight, please don't perceive it that way. Just trying to show another view point. And I, for one, don't feel that it is necessary to judge what a person eats in any way, shape, or form. If someone wants to call themselves a pescatarian, that is their business (referring to other posts on the topic).
