Guest guest Posted July 5, 2001 Report Share Posted July 5, 2001 * Exported from MasterCook * Harvest Corn Chowder Recipe By :Adapted from America's Best Slow Cooker Recipes, Donna-Marie Pye Serving Size : 10 Preparation Time :0:00 Categories : America's Best Slow Cooker Rec Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon corn oil or vegetable oil 2 medium onions -- chopped 2 stalks celery -- chopped 2 medium potatoes -- chopped 4 cups corn kernels -- fresh or frozen 4 cups vegetable broth or vegetarian chicken broth 1 bay leaf 1 teaspoon salt 1/2 teaspoon black pepper 2 tablespoons butter or margarine 2 tablespoons all-purpose flour 1 13 oz can evaporated milk OR 1 1/2 cups whipping cream 1 cup grated Cheddar cheese Cheddar cheese chopped fresh parsley imitation bacon bits -- (optional) In a large nonstick skillet over medium heat, heat oil, and cook onions and celery for 5 minutes or until onions are translucent. With a slotted spoon, transfer mixture to slow cooker. Add potatoes, corn, stock, bay leaf, salt and pepper to slow cooker; stir to combine. Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours, until vegetables are tender and soup is bubbling. Remove bay leaf and discard. In a saucepan over medium-high heat, melt butter. Add flour and stir to make a smooth paste. Slowly add milk, whisking constantly to combine. Bring mixture to a boil, whisking constantly, until thickened. Remove from heat and stir in cheese until completely melted. Gradually stir milk sauce mixture into slow cooker. Cover and cook on high for 20 to 30 minutes.
