Rice and Lentils

Hello everyone:

Does anyone have a simple and easy crockpot recipe that combines two

of my favorite ingredients, rice and lentils? I tend toward

California organic basmati rice and red or yellow lentils, but I

suppose any recipe can be adjusted. I'm looking for a somewhat

precise ingredient ratio, since what I've experimented with in the

past has usually turned into a sticky mess from either a lack of

water or broth or too much/too little of one ingredient or another.

funny you should ask! just yesterday a made a lentil-rice dish in my

crock pot. here's the recipe and my notes:

 

Lentil Rice Casserole

from The Tightwad Gazette

 

3 cups broth (calls for chicken broth, or water with 1 tbsp vegetable

seasonings.)

3/4 cup lentils, uncooked

1/2 cup brown rice, uncooked

3/4 cup chopped fresh onion

1/2 tsp sweet basil

1/4 tsp oregano

1/4 tsp thyme

1/4 tsp garlic powder

 

Combine everything and cook in slowcooker for about 6 hrs on low.

 

Originally, this recipe said to bake at 300*F for 1 1/2 hours, but when

it appeared in the Tightwad Gazette, the author commented that it could

be done in the crockpot as well, which would be a more energy-conscious

and frugal way to prepare it, unless you were already using the oven for

other items.

 

I find the ratio of rice to lentils to be pretty good, as once the rice

cooks it about evens things out. And six hours is more than enough for

the grains to get done, but the lentils are still firm; 8+ hours will

turn them to mush.

Thank you, your recipe looks to be exactly what I've been looking for, with

precise ingredient amounts (I tend to create disasters [at least the first time

around] if I don't follow a defined recipe). I'll be making it this morning in

time for our family meal this evening; thanks!
