She's vegetarian; I'm vegetarian trying to become vegan. It needs to be something lunchy that all the " meat eaters " will enjoy. Thank you!! I just add tomato juice, black beans, chili beans, white and yellow corn, rotel tomatoes (a must for the right flavor, if you don't want it too hot, just add half a can). For spices use one packet of taco seasoning and one packet of buttermilk ranch dressing powder. For the non vegan, they can top with cheddar cheese and sour cream. Judy >>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>> Hi Judy and all I made stuffed crepes and it was very well received by the meat eaters who were at our dinner party. first make a bunch of crepes - you can use the recipe on a Bisquick box you can make the crepes a few days before and store in the fridge separating each crepe with a sheet of waxed paper beween them Filling You can fill them with enything you want beans,greens, etc. I had two different fillings a) baby carrots (roasted with ginger and salt till tender and asparagus - aslo roasted till tender with garlic and salt b) a duxelle of minced shallots and mushrooms (i minced in the food processor) which have been sauteed in olive oil and garlic Fill all the crepes and put them in a roasting pan pour sauce over them add some cheese if you like and bake till heated through Sauce I made a sauce of chicken stock, garlic , white wine minced shallots I thickened the suce with a corn starch slurry (corn starch + water (or stock)) (you can certainly use vegetable stock instead of chicken) I put grated swiss cheese over the filled crepes, poured the sauce over and baked about 30 min @ 350 It was very well received Happy cooking Michael Pollack Hotjobs: Enter the " Signing Bonus " Sweepstakes Quote Link to comment Share on other sites More sharing options...
