These recipes are from " The Joy of Natural Cooking " by Marcella Lynch

Better Butter

1 T. agar agar flakes OR Emes Kosher gelatin (unflavored)

1-1/2 C. cold water

1 c. cooked millet, packed

1/4 c. raw cashews

1 t. salt

1 T. cooked, peeled carrots

Stir agar flakes into water in small saucepan. Let stand 5 minutes.

Cook over high heat until gelatin is dissolved and liquid is clear.

Blend half of the gelatin mixture with the rest of the ingredients at

low speed, increasing to high speed until blended smooth. Blend in

remaining gelatin at low speed. Cover and let cool to allow air to

escape. Pour into containers and chill--do not freeze. Keeps one week.

Millet Spread

3/4 t. salt

1/3 c. cooked carrots (I'd even use 1/4 c. if I didn't want the

butter so orange colored)

1/3 c. warm water

1 c. hot, well cooked millet

1/3 c. fine, unsweetened coconut

Whiz in blender until creamy smooth.

There--now are you all happy????? :D Marilyn

If you don't tell your family it's millet, chances are they'd never guess.

Enjoy! :)
