lima beans...lentils....

I have a couple of bags of lima beans and lentils in my cabinet. Any ideas what

to do with them (they don't have to go together, of course)? I've never made any

legumes in the crock, so does anyone have tips for me?

Soak them first no matter what. If you'll be cooking them with

anything tomato, then cook them first too (on the stovetop). Adding

tomato keeps them from cooking any further (which is nice in that

they don't turn to mush! But a pain if you forget!).

 

You could use the lima beans in a basic vegetable soup. For the

lentils I would make lentil soup, very filling!

Sandi--Soups! Definitely! I love lentil soup, and had an excellent lima bean

soup recently as well. Not sure if I tried the ones from Dr. McDougall's

books, the Newstart cookbook, or from a website, but they turned out great. And

SO

easy! Hopefully, someone here has recipes to share for these.

Marilyn -- Yes, I love lentil soup. If anyone has a recipes (something with

spinach would be nice), please pass it on. I'm a busy grad student and don't

have a lot of time for browsing recipes online or in cookbooks, though that is

one of my favorite stress-relieving goof-off activities :) I definitely spend

more time looking at recipes than making them (although I just made a yummy

black bean burrito).

 

Janet -- I have everything for the lima bean cassoulet except the Gimme Lean. As

soon as I get down to the co-op I'll be all set, but unfortunately the weather

has not been co-operating (bad humor, sorry!)
