I thought it would be fun to share crock pot

themed questions for the group each week.

Just simple questions to spark idea sharing

and topics. There is no pressure to participate,

but the more the merrier!

 

1. What are you planning to make for dinner this

week?

 

2. How many meals will you be fixing in your crock

pots?

Monday: BBQin' so for me I will have a Quorn naked

cutlet with some yummy BBQ sauce, cole slaw, & potatoes

ranch style [i will make those in the crock pot]

 

Tuesday: All Day Mac & Cheese [shared by Annie],

and some salad on the side.

 

Wednesday: Beefless Stew [a crock pot recipe I will share],

crusty French bread and green salad.

 

Thursday: Crock pot Chili served with rice, salad veggies,

and sour cream.

 

Friday: NO CLUE! *lol* I am hoping to get great ideas

for our other veg groups and recipes shared here.

At least 4 so far, probably more. It is going to be

wicked hot this week! 106F- eek!

This week I made up a menu plan for the first time and I'm using my

slow cooker for most of it:

 

Saturday: Red Lentil and Carrot Soup with Coconut

Sunday: Moroccan Inspired Vegetables and Chickpeas

Monday: No Hurry Vegetable Curry

Tuesday: Vegetable Jambalaya

Wednesday: Tofu grill sausages with penne pasta and All Day

Ratatouille

Thursday: Farm Stand Chilli

Friday: Corn Chowder in Winter

 

The first is from 125 Best Vegetarian Slow Cooker recipes by Judy

Finlayson and the others from Fresh from the Vegetarian Slow cooker

by Robin Robertson.

 

Each of the recipes makes about 4 portions, so I shall be freezing

the leftovers and will have about 21 frozen meals in my freezer. Next

week's menu is already planned:

 

Saturday: Potato and Mushroom Burgers

Sunday: Crockpot Green Lentil Stew

Monday: Tomato Soup with Rosemary

Tuesday: Aduki Bean Stew

Wednesday: Moroccan Split Pea Soup

Thursday: Stuffed Mushrooms

Friday: Lemony Bean Hotpot

 

I will be adapting the Tomato Soup, the Split Pea Soup, the Aduki

Bean Stew and the Lemony Bean Hotpot recipes to cook in my slow

cooker. Then for the next couple of weeks I shall just be cooking one

or two new slow cooker recipes per week and eating my way through the

contents of my freezer. I use my slow cooker a lot, but I've never

before been so organised. I'm trying to save money, so menu planning

seemed a good way to go.

Wow, PT, I cannot imagine 106F. We are having a dreadful summer -

today has been between 48 and 60 degrees and rainy. When it's this cold

I just want to eat hot bowls of soup to try to warm up.

not in the files but if you use the search facility you should be able

to find it.

I made crockpot spaghetti this past weekend.

I'm having some tonight as a left over for dinner.

I plan one more meal using the crockpot this week. Maybe anasazi

beans or a lentil stew.

 

I love the question of the week.

I like the idea of some vegetable soup. I could make it tomorrow and

enjoy it for a few days after.

Don't really have a recipe, just clean out the veggie crisper and add

ingredients as I go along.

-Tonight I just had some leftovers. Tomorrow I plan to make something tex-mex. I

have a

good recipe for a veg enchilada crock pot that I fixed to being veg with

substitutions. I

first got the recipe from a " meat with campbell's soup " type crock pot list. Is

that the best

those groups can come up with? <lol> It is like all they do is cut up meat and

pour

condensed soups over it. Okay, silly rant over. <lol> They do give good ideas

for ways to

make meals veg if you use imagination, skip the soups, and add more vegetables.

I made really hot chili over the weekend and still eating it up.

I plan on trying some of the recipes I see posted in the group real

soon.
