Guest guest Posted October 22, 2008 Report Share Posted October 22, 2008 * Exported from MasterCook * Slow Cooker Chickpeas with Chard - 8 pts Recipe By :Not Your Mother's Slow Cooker Cookbook by Beth Hensperger and Julie Kaufmann Serving Size : 3 Preparation Time :0:00 Categories : 3-4 1/2 quart 8 hr cook time or more Slow Cooker Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup dried chickpeas 1 1/2 pounds Swiss chard -- rinsed, stems discarded, leaves coarsely chopped; or 1 1/2 lbs. spinach, rinsed, tough stems removed, and large leaves chopped 2 cups water 1/4 cup olive oil 2 small white onions -- finely chopped 2 tablespoons tomato paste 1/2 teaspoon fine sea salt -- to taste pinch cayenne pepper -- or pure New Mexican chile powder few grinds of black pepper Place the chickpeas in a colander and rinse under cold running water; pick over for damaged beans and small stones. Transfer to the slow cooker (it must be large enough so that there is plenty of room for the chickpeas to bubble without spilling over). Cover with 3 inches of water and soak 6 to 12 hours. If using Swiss chard, blanch the chopped leaves in boiling water for 3 mins. Drain the chickpeas, add the 2 cups water, cover, and cook on High until just tender, 3 to 3 1/2 hours. The chickpeas need to be covered with liquid at all times to cook properly. In a small skillet over medium-high heat the olive oil, then cook the onions, stirring, until almost golden and browned around the edges, about 8 mins. When the chickpeas are tender, add the onions and oil, the wilted chard (dripping with water is fine) or raw spinach, tomato paste, salt, cayenne, and black pepper. Cover and continue to cook on High for another 1 1/2 hours. Serve hot.
