Guest guest Posted October 22, 2008 Report Share Posted October 22, 2008 * Exported from MasterCook * Slow Cooker Caribbean Black Bean Soup - 2 pts Recipe By :Sandra Lee Semi-Homemade Slow Cooker Recipes Serving Size : 6 Preparation Time :0:00 Categories : 4 quart Low Fat (Less than 5%) Slow Cooker Vegetarian WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cans black beans, canned -- rinsed and drained (15 ounces each) 2 cans reduced sodium broth -- (14 ounces each) 20 ounces diced tomatoes -- with lime and cilantro (2 - 10 ounce cans Ro-tel) 1 cup frozen chopped onions 1/2 cup diced carrots -- 1/2 " cubes 1/2 cup diced celery 1 tablespoon paprika 2 teaspoons ground cumin 1 teaspoon crushed garlic -- (bottled Christopher Ranch brand is fine) 1/4 teaspoon ground cloves 2 tablespoons balsamic vinegar sour cream fresh cilantro leaves In a 4 quart slow cooker, stir together beans, chicken broth, undrained tomatoes, onion, carrots, celery, paprika, cumin, garlic, and cloves until thoroughly combined. Cover and cook on High for 4 to 5 hours. Stir in balsamic vinegar. Serve with sour cream and cilantro leaves (optional). Serves 6.
