Guest guest Posted October 25, 2008 Report Share Posted October 25, 2008 * Exported from MasterCook * Slow Cooker Apple and Dried Fruit Chutney - 4 pts Recipe By :An Apple Harvest by Sharon Silva and Frank Browning (Ten Speed, 1999) Serving Size : 14 Preparation Time :0:00 Categories : 4-6 quart Large round cooker Small and medium round cooker Vegan Vegetarian WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 large Granny Smith apples -- pippin, fuji, or other tart cooking apple; peeled, cored, and coarsely choppped 1/2 cup chopped dried apricots 1/2 cup chopped dried pears 1/2 cup chopped dried peaches 1/3 cup golden raisins 1 2 inch ginger root slice -- peeled and grated 5 cloves garlic -- to 7 cloves or to your taste, mashed 2 1/2 cups sugar 1 1/4 cups white wine vinegar 1 1/2 teaspoons salt 1/2 teaspoon cayenne pepper -- to your taste Combine all the ingredients in the slow cooker. Cover and cook on High for 4 to 4 1/2 hours, until it achieves a jam-like consistency. Remove the lid and let the chutney cook on High an additional 30 minutes to evaporate excess juice and thicken if necessary. Turn off the cooker and let cool to room temperature in the crock. Scrape with a rubber spatula into clean spring-top glass jars (or use screw tops with new lids). Store, covered, in the refrigerator for 2 weeks BEFORE using to allow the flavors to mellow. It will keep in the fridge for up to 2 months. Serve cold or at room temperature. Makes about 3 1/2 cups.
