Guest guest Posted October 25, 2008 Report Share Posted October 25, 2008 * Exported from MasterCook * Slow Cooker Crock-Baked Soybeans - 6 pts Recipe By :Not Your Mother's Slow Cooker Cookbook by Beth Hensperger and Julie Kaufmann Serving Size : 5 Preparation Time :0:00 Categories : 4-5 quart 5-7quart Medium or large round cooker Slow Cooker Vegan WW Points Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried soybeans 4 cups water -- or to cover 1/2 medium yellow onion -- sliced into half-moons 1/4 cup firmly packed brown sugar -- light or dark 1/4 cup molasses 1 teaspoon salt 1/2 teaspoon dry mustard 2 tablespoons toasted sesame oil -- or black sesame oil Rinse the beans in a colander under cold running water; pick over for damaged beans and small stones. Transfer to slow cooker. Cover with cold water by 2 inches, soak 6 to 12 hours, and drain. Cover with 4 cups water. Cover and cook on High until tender, about 4 hours. The beans need to be covered with liquid at all times to cook properly. Drain the cooked beans and return them to the cooker. Add the onions, brown sugar, molasses, salt, mustard, and sesame oil; stir to combine. Cover and cook on Low for 5 to 6 hours, until the soybeans are flavorful but still moist and the onion is soft. Stir gently so as not to mash the beans and serve hot. Serves 4 to 5. With all the positive attention soy foods have been getting lately, you would think that soybeans would be on everyone's table. Though soymilk, toasted soy nuts, tofu and the fresh soybeans known as edamame do turn up in the kitchens of the health-conscious with great regularity, soybeans in their most basic form do not. We think its because people don't know how to cook soybeans. They are cute little yellow ovals and have a mildly nutty flavor. Even when cooked until tender, they hold their shape better than most other beans. And like all beans, they absorb flavors of added ingredients beautifully. The toasted sesame oil included here give the beans a hint of smoky richness without adding much fat. Nutr.
