Guest guest Posted January 22, 2009 Report Share Posted January 22, 2009 Crockpot Curry Vegetables with a Hint of Coconut 3 lbs. chopped fresh vegetables 1/2 cup frozen peas 2 cloves garlic 13 ozs. diced canned tomatoes 1 1/2 cups vegetable stock 1 15 oz. can chickpeas, drained and rinsed 2 tbsps. curry powder (this makes it medium - use more or less to your liking) 1 tsp. ground coriander (cilantro) seeds 1 cup coconut milk Put all the vegetables, tomato, garlic, and chickpeas into the crock pot. Combine the stock, coconut milk, curry powder and coriander. Then add to the crock pot. Give it a quick stir to combine. Cover and cook for 10 to 11 hours on Low. Serves 4 to 6. Also, do you typically serve this over basmati rice? There's a former professional chef who has a column in our local newspaper and I often clip, save and try out his recipes. Every time, I end up throwing out the finished product. Can't explain it.
