I slice as many onions as my 2-quart crockpot will hold, either by hand or with the slicing blade of the food processor. Thin, thin slices are the best. I fill up the crockpot with the onions, drizzle a little olive oil on them and stir them up a bit, and set it on Low and put it in the utility room so the whole house won't smell of onions (open floor plan, after all). By the time I'm ready to make soup the next day the onions are soft and brown and sweet. For the steel cut oats I start by bringing 4.5 cups of water to a boil and stirring in 2 cups of steel cut oats to get them started, then put the hot mixture into the crockpot, set it on Low and leave it overnight. Multigrain cereal works pretty much the same way, just follow the ratio of cereal:water of whatever sort you're making. You can cook wheat berries (just plain wheat grains from a natural food store -- organic is best) the same way. I like to add some fennel seeds to the wheat for a licorice-flavored breakfast. I like to make more than enough for one breakfast so I can just reheat leftovers the next morning. ~ irene > Irene, > You mentioned that you carmelized Onions in your crockpot.
