Avoiding canned beans

I'd like to cook up a nice winter vegetable soup this weekend, and I'd like to

avoid canned

beans. It's a special occasion, and the extra effort and flavor will be

appreciated. How do I

cook the beans in a crock pot, as part of one of these yummy soup recipes?

Wash and Soak your beans overnight if possible in plenty of water (beans will

soak up the water). In AM drain water off and put beans in crockpot. One cup of

dry beans will be plenty for a soup, I think.

for a first-time slow bean cooker. It's an interesting blog to read if

you're not already familiar with it. It's not all vegetarian, but she's

got quite a few vegetarian recipes, and many are easily adaptable.

Also, because one of her kids is gluten intolerant, there are a lot that

are gluten free as well.

 

If you want to use beans in your soup without pre-cooking them, your

soup will need to be tomato and salt free (or free of any acidic or

salty food) until after the beans are cooked (acid and salt can cause

your beans to never cook fully). This is a riskier way to go about it,

especially for a special occasion. It's safer with quicker cooking

beans like lentils.

I found that if you take a cup or two of beans and put into the crockpot and add

enough

water cover the beans. (about 1:3 ratio beans to water) It won't hurt if you put

too much

water....turn the crock pot on high and cook for 8-10 hours.

To put into a recipe make sure to drain all the water off the beans first and

rinse them.

(do not add any seasonings to the crock-pot when first cooking the beans

overnight)
