Guest guest Posted September 5, 2009 Report Share Posted September 5, 2009 Slow Cooker White Bean Soup 1 quart vegetable stock 1 cup peeled and diced carrots 3/4 cup diced celery 1 large regular or sweet onion, chopped 2 to 4 cloves garlic, chopped 2 potatoes, peeled and diced Shake of liquid smoke 2 bay leaves 15 ounces canned tomato, diced, drained if desired 45 ounces cabbed Great Northern or Navy beans, drained 1/4 teaspoon ground cumin 1/2 teaspoon seasoned salt or to taste 1/4 teaspoon ground black pepper or to taste Place stock or broth, carrots, celery, onions, garlic, potatoes, bay leaves, tomatoes, beans, and seasonings into slow cooker. Cook on high temperature setting for 4 hours or on low temperature for 8 hours. Reheat for an additional 30 minutes prior to serving if not served immediately after being slow cooked. It is found near the meat broths. There are also vegetarian boullion cubes, in brands like Maggi, Knorr, Edward & Sons Garden Veggie, The Organic Gourmet Vegetable Boullion. Then there is Vegetable Better Than Boullion . It is a paste in a jar that you mix with water. I've found it in Super Targets and other grocery stores. Also in Whole Foods and other Health Food Stores. http://www.amazon.com/Better-Than-Bouillon-Vegetable-Base/dp/B00016LA9S Then there are the vegetarian Bill's Best and McKay's Seaonings that are wonderful. You can recreate chick*en and be*f broth that are all vegetarian to put in soups, gravies, rice ect. I love these and use them all the time. You can find them in health food stores, on Amazon and many places online. Also since you are in the Atlanta area, go to the Adventist Book Center on Memorial Drive. I keep all of my vegetable trimmings, like celery and carrot peels, onion bits, just about everything, saving them in a baggie in the freezer. When it gets full, I put in the pressure cooker, add hot water and cook for 15 minutes then strain (though you could use a regular pan and cook about 45 min).
