Collard Greens

This a standard part of the Mississippi diet, but it is almost always cooked

with pork. To cook collards or other greens healthy and veggie, wash them well,

chop them into pieces about 1 " by 2 " or so, slow boil them 30 minutes or so in a

big pot with some salt, pepper, vegetable oil, maybe veggie baco bits or Wham if

you like, and enough water to make plenty of 'pot likker' to dip your cornbread

in.

I have yet to taste greens. I shall try making these this weekend.

I'm quite curious now.

One large bunch of collard from the farm stand washed and roughly chopped; 3

cloves of garlic chopped; 1/2 red onion diced; 4 roma very ripe tomatoes diced;

1/2 tsp liquid smoke; 1/4 tsp smoked mesquite dry rub; 1/2 cup vegetable broth.

 

For the base each week, I take all the chopped vegetables (swiss chard roots,

kale bottoms, celery bottoms, carrot bottoms, summer squash, pepper cores and

seeds, onion roots, etc everything I used during the week) and once I have

enough that will fill the crockpot, I add water and more garlic and put the

crockpot on for 10 hours. Strain and refrigerate for future use.

 

So I used 1/2 cup of this base and put the crock pot on low for 10 hours.

 

In a separate crockpot, after soaking for about 20 hours, I have red kidney

beans and adzuki (sp) which after cooked, I will strain and mix in.

 

Does anyone have any other collard green recipes?
