Guest guest Posted November 25, 2009 Report Share Posted November 25, 2009 I have a Rival 3 1/2 quart crockpot and I use their Bread ‘n Cake Bake Pan insert as a pudding mold inside the crockpot to get that authentic steamed pudding effect. This is my own creation and it is very rich. Hope you like it! Crockpot Figgy Pudding 1 c figs or dates 1 c cold butter (2 sticks) 1/2 c raisins 2 eggs, well-beaten 1 c light brown sugar 2 T milk 1 t baking soda 1 t salt 3/4 t cinnamon 1/2 t nutmeg Chop figs or dates with cold butter until fine (if using dried, you can soak in a little boiling water for a few minutes until soft enough to chop). Mix with the rest of the ingredients and pack into a greased mold. Put its vented lid on top. Add 1/2 c water to the crockpot (not the mold) to allow steaming. Put the crockpot lid on top. Cook on high for 2-3 hours. Serve with the following sauce: Figgy Pudding Sauce 1/2 c butter 1 1/2 c powdered sugar 1 egg yolk 1 t vanilla extract Cream butter until very soft. Add sugar gradually and continue whipping until mixture is very smooth. Add egg yolk and vanilla and beat smooth. If you like a thinner sauce for spooning over pudding, add a little boiling water. Note: I don’t think Rival makes their Bread ‘n Cake Bake Pan any more (I ordered mine direct from Rival many years ago), but you can still find it on eBay in 2 sizes. Perhaps an extra large mason jar could serve as a substitute... punch several holes in a mason jar lid to serve as a vented lid. Enjoy!
