Guest guest Posted December 18, 2009 Report Share Posted December 18, 2009 Crockpot Red Beans and Rice Makes 8 servings 1 lb. dried kidney beans (2 cups), sorted and rinsed 1 large green bell pepper, chopped (1 1/2 cups) 1 large onion, chopped (1 cup) 2 cloves garlic, finely chopped 7 cups water 1 1/2 tsp. Salt 1/4 tsp. Pepper 2 cups uncooked instant rice Red pepper sauce Mix all ingredients except rice and pepper sauce in 3 1/2-6 qt. slow cooker. Cover and cook on HIGH 4-5 hrs. or until beans are tender. Stir in rice.Cover and cook on HIGH for 15 to 20 min. or until rice is tender. Serve with pepper sauce. Guest guest Posted December 22, 2009 Report Share Posted December 22, 2009 I have been cleaning my beans and adding 6 cups of vegetable stock and/or water to my beans and I turn my crock pot on high and I leave for work - when I come home 8 plus hours later, the beans are perfect. I don't soak them. We have a brazilian exchange student and he says they're perfect - just like his mom makes... must be okay, right?
