Guest guest
Hi All, Time for another Question of the Week - What is on your menu for Christmas Eve and Christmas Breakfast and Dinner? Do you have special traditions you do? What kind of cookies or other treats do you leave out for Santa? Do you make a Birthday Cake for Jesus? Do you use your crockpots to make special dishes in, or to keep soups and hot cider warm in? Please share and inspire us all by telling us how you enjoy the Christmas season with parties menu's and the above menus. Thanks !!! You and your answers make this list a wonderful helping tool for all of us! Judy

On Christmas Eve we play board games and eat wine, cheese, bread and fruit. On Christmas morning we'll have a big breakfast of South of the Border Bake (from Diet for a Small Planet) muffins and fruit and mimosas. Then for dinner that night I'll fix my wild rice casserole, baked butternut squash, a green vegetable (whatever looks good at the co-op), Fried Spiced Tofu (also from Diet for a Small Planet), cranberries, bread rolls and a nice Washington wine. For dessert we'll have pumpkin pie. My son flies in tomorrow and my daughter will drive over on the 24th. I'm really looking forward to seeing them. So far they are only forecasting rain so that will be good for traveling. Happy Holidays everyone and enjoy some good veggie meals! Guest guest
My husband makes beef bourgeon in the crock pot (I probably misspelled that) for his work Christmas party each year. It is more work than I am willing to do but I am glad he does it because it does taste good. This year for my office party I was trying to think of something different. I was trying to find an etoufee recipe for a crock pot without much success until I found this - I use shrimp since I can get that and can't get crawfish so it is a shrimp etoufee (sort of) 2 cans cream of mushroom soup 1 can RO*TEL (canned tomatoes with jalapenos) 2-3 ribs celery sliced 1 large onion diced 1 large green pepper diced Some crushed garlic equivalent to 2 cloves Put the above in the crock pot for on low for 5-7 hours (until the celery isn't crunchy) Add 1 - 2 pounds of pealed and cleaned shrimp (I cut the shrimp in half so they are more " bite size " ) and the sliced green tops of 1 bunch scallions (green onions) and cook for another hour. Serve over rice. It is easy and impressive.
