I'm interested in vegetarian food for the health aspect. As a novice cook, the quicker the recipe the better (less for me to complicate). Hi All I am Suzanne a mommy of four. I am trying to be a vegetarian. I am not looking for any specific recipes but I do love strawberries and other berries and fruit. I am glad to here. Easy recipes for me would be great. Mainly because my children are still young. My oldest is 5 1/2 and my youngest is 4 months. My youngest is still only being breast fed. I am not for sure when I will introduce solids on him. And my older ones do eat meat, diary, and poultry but what is cool is that when I have serve salad with there meals they will eat that but not the meat that I have served. Go figure. Anyway I am sure I will learn a lot here. Before my son was born, I used to basically make two dinners -- one meatless, one not -- but since having a child, those days are long gone. Now I have announced that I will fix one meal only, but will try to make it something palatable to all. As you can imagine, this is no easy thing, especially since I have started back to (grad) school and don't have tons of time to spend in the kitchen anymore. I would love to have a renewable source of cooking ideas, so I was thrilled to find this list. I look forward to hearing what everyone else is having for dinner! Little did I know where He would take me. My husband and I got a post card in the mail reguarding a college of natural health getting ready to start it's next session. We were compelled to participate. What an amazing difference the knowledge about taking responsibility for our own health has made! Our children are doing fabulous...they love all the fruits and veggies!! My health has recovered(?) (how can I say re-cover when I have never known this before!) in many areas and is growing stronger every day (and every healing crisis...) We are now doctors of naturopathy - we can counsel on diet and nutrition to help others give their bodies what they need to obtain health. This is NOT an advertisement but if you would like some advice I love to teach. I look forward to learning more from those of you who are long-timers! And learning from those of you that are new in this area but growing fast!! Our favorite cookbook is Marylin Diamond's - American Vegetarian. We love the great nut- milk and fruit shakes (the date shake is my favorite!) The almonnaise is fabulous and easy, use in place of mayo or as a dip. So here are those recipes: Almond milk 1/2 cup raw almonds 2 cups water 1 tbs. real maple syrup (I use 8 drops of Sunrider's stevia) Process the almonds in a blender until a fine poder. Add sweetener and 1 cup of water. Blend again for 1-2 minutes to form a smooth cream. With blender running on high, add remaining cup of water slowly through opening of the blender lid. Blend 2 minutes. Place one medium-size fine strainer over a large bowl or pitcher. Line the strainer with cheesecloth. Pour almond milk into strainer and allow to filter through. Squeeze out extra liquid when the milk has stopped flowing on its own. (The almond fiber can be stored in the refrigerater for a few days and used as a moisturizing body scrub when you shower....your hands get softer just from making the milk!) Date Shake 1 1/2 cups almond milk 2 frozen medium bananas 6 large dated, fresh or frozen, seeds removed Place milk and fruit in a blender. Blend until thick and creamy. If you like a thinner shcake use 1 1/2 bananas. (I like to add ice too.) Almonnaise 1/2 cup raw almonds 1/2 to 3/4 cup water or soymilk 2 rounded tsp soy powder ( optional) 1 tsp nutritional yeast scant tsp garlic powder 3/4 tsp salt-free seasoning or seasoned salt 1 - 1 1/4 cups safflower or sunflower oil 3 tbs lemon juice 12 tsp apple cider vinegar Cover almonds with boiling water and allow to cool slightly. Slip off skins. Have all ingredients handy. Place almonds in blender or food processor and grind to a fine powder. Add half the water or soymilk along with the soy powder, yeast, garllic powder, and seasoning. Blend well, then add the remaining water or soymild to form a smooth cream. With the blender running on low, drizzle the oil through the whole in the blender lid in a thin stream until mixture is thick. Keep blender running and add lemon juice and vinegar. Blend on low for 1 minute longer, to allow mixture to thicken to desired consistency. Refrigerate tightly sealed; this will keep 10 days to 2 weeks in the refrigerator. Yields 1 1/2 to 2 cups. Do they have any vegetarian food at college? because my mom says that when i go I hafta use the school food plan. I am going to stay a vegetarian though! I want to go to Madison, and I am sure there will be a lot of veggie food at the stores there to supplement my diet. I live in Wauwatosa, near Milwaukee. I almost married into it but am in a much less scenic part of the country.... But I do get to live my fairy tale in spite of the scenery. My favortite lunch is a whole wheat tortilla, a smear of eggless mayo, sliced up red bell pepper, cucumber, avocado, tomato, lettuce, sprouts,....etc. Get a big tortilla!! Or two!! Sometimes I use salad dressing and have a salad on the run. I am usually running after my children!!
