Kofta Rangeen

 

Ingridents:

 

for the kofta filling

 

1 carrot - shredded on the grater

1 capsicum - shredded

3 -4 tablespoon shredded cabbage

1 small onion - shredded

1 1/2 tablespoon oil

salt and pepper to taste

 

for the kofta covering

 

1/2 pound of cottage cheese

3 tablespoon all purpose flour

1/2 teaspoon salt

1/4 teaspoon curry powder

1/4 teaspoon red chilli powder

1 bread slice squeezed out of water

 

for the gravy

 

4 tablespoon oil

2 brown cardamom

1/2 " piece ginger

3/4 cup milk

3 tomatoes

1 tablespoon tomato ketchup

1 1/2 teaspoon coriander powder

1/2 teaspoon red chilli powder

1/2 teaspoon curry powder

salt to taste

 

Preparation:

 

for the kofta filling

 

1.Shred all the vegetables into long thin strips

2.Heat oil in a wok, add onions. Cook for a few seconds.

3.Add capsicum. Fry for a few seconds.

4.Add cabbage and carrot. Stir fry for 1 minute.

5.Add salt and pepper to taste

6.Remove from stove and cool.

 

for the kofta covering

 

1.Grate cottage cheese and mix with flour and other ingredients with the

palm of the hand till the grains of cheese

disappears.

2.Divide into 4 big balls

3.Flatten each ball to a size of about 2 1/2 " diameter.

4.Place 1 tablespoon of filling in the center.

5.Lift the sides to cover the filling.

6.Give the kofta an oval shape like an egg.

7.Roll in flour and deep fry koftas carefully to a golden brown color.

 

to prepare gravy

 

1.Grind onions, ginger and seeds of cardamom together.

2.Grind tomatoes to a puree. Keep aside

3.Heat oil. Add onion paste and cook on low heat till golden brown in color.

4.Add corriander powder. Mix

5.Add milk gradually, 2-3 tablespoon at a time, stirring continuously

till all the milk is used.

6.Cook on stove (low) till the mixture turns brown again and the oil

separates. Add red chilli powder.

7.Add the tomato puree, cook till oil separates.

8.Add enough water to get a thickk gravy. Add salt, curry powder, and

tomato ketchup and cook covered on stove

(slow) for 5 - 7 minutes after the first boil. Keep aside

 

to serve koftas

 

1.Cut koftas into two, lengthwise. Heat in a preheated oven for 3-4 minutes.

2.Boil the gravy separately, and pour in a serving dish.

3.Arrange the heated koftas on the gravy.

4.Serve immediately.
