Oh, I forgot to mention, if you can't get fresh tomatoes, canned do very

well, too. I got two 28-ounce cans of whole, peeled tomatoes and just sliced

them. They worked deliciously, and their extra juices added a GREAT touch.

Also, I used red wine vinegar because I thought it would go best, but you

can experiment around with other types! Apple cider vinegar might give the

dish a nice hint of sweetness.
