Tanaista BTW/ mom...did that work when I change your list settings? =============================================================== TODAY'S TIP: LAZY DAISY CAKE This recipe is more than 50 years old. Presumably its name arises from the fact that it's an easy mix-and-bake cake, rather than the kind where you have to carefully fold in egg whites and tiptoe around the kitchen lest your creation collapse. In any case, it's just as tasty today as it was in the 1950s! 2 eggs, at room temperature 1 cup sugar 1 teaspoon vanilla 1 cup flour 1 teaspoon baking powder 1 tablespoon butter 1/2 cup hot milk Topping: 5 tablespoons brown sugar 3 tablespoons milk 3 tablespoons butter or margarine 1/2 cup chopped nuts 1 cup grated coconut Preheat oven to 350 degrees. Grease and flour a 7-inch by 11-inch baking pan, or line the bottom with parchment paper. Beat eggs with sugar until fluffy. Add vanilla. Sift together flour and baking powder; add to sugar mixture. Melt butter in hot milk and add to other ingredients. Bake 20 minutes. Bring topping ingredients to a boil in a saucepan. When cake is done baking, remove from oven and pour boiling mixture on top. I don't eat eggs, so here's how I substitute for cakes or muffins, just it case someone might be interested. For a small recipe like this one, I add one tablespoon vinegar and 1 teaspoon baking soda. I add the vinegar to the milk and the soda with the flour. The sour milk makes the cake nice and light. (for a larger recipe - like 2 or 3 cups of flour, I put 2 tablespoons of vinegar and 1 and 1/2 teaspoons baking soda.) Sometimes, if there is not much fat in the recipe I also add a bit of oil (about the amount of liquid that the eggs would give). Hope this helps! By the way, I tried this recipe for NO-BAKE COOKIES we received a couple days ago and they are absolutely GREAT! I used carob instead of cocoa, and it tasted almost like fudge. You have to try them! You know those powdered egg whites Wilton carries with their stuff? Do the no egg folks use this sort of thing? I'm not actually even sure if they are truely eggs.
